PISTACHIO PUDDING
Ingredients:
One large tub Cool Whip (16 oz)
One large can crushed pineapple
(all I had on hand was the smaller size can)
Two packages (3.4 oz size) Jello instant pudding - pistachio flavor

One large can crushed pineapple
(all I had on hand was the smaller size can)

Two packages (3.4 oz size) Jello instant pudding - pistachio flavor

DIRECTIONS:
Pour all of the Cool Whip into large mixing bowl.
Add the pudding mixes to the cool whip and mix well.
Picture shows how it looks after mixed.

Next, add the crushed pineapple (don't drain!) and stir into the mixture.

Cover and chill in refrigerator at least over night, but it's even better after 24 hours. Usually I just put it back into the Cool Whip tub to save space in the refrigerator. You can transfer to a serving dish later.
You can also add some shelled crushed pistachios too, if you like.
You can cut this recipe in half too, using the smaller tub of cool whip, small can of crushed pineapple and only one package of pudding mix.

Oh my gosh - I LOVE pistachio! I am so going to try this out. Making it myself means I can leave out the nuts and just have the awesome flavor!!!

this stuff is good! I make a version that calls for mini marshmallows. I just love pistachio. Plus this dessert isnt too bad calorie wise compared to others (i gotta watch that) esp if you use sugar free pudding and fat free milk tho I prefer it full on normal style but in a pinch for the waist I go sugar free to beat that craving because this stuff is something I get a craving for LOL ^__^
