MMMMmmmmmm.....It was so good!
Don't the blueberries look yummy?
1 cup vegetable oil
3 teaspoons vanilla extract
2 1/4 cups white sugar
2-3 cups shredded zucchini
3 cups all-purpose flour
1 teaspoon salt
1 teaspoon baking powder
1/4 teaspoon baking soda
1 tablespoon ground cinnamon
1 pint fresh blueberries (washed)
Preheat oven to 350 degrees.
Lightly grease 3-4 mini-loaf pans. I have size 3 inches X 6 inches (love this size & it's great for gift-giving!).
In large bowl, beat eggs, oil, vanilla, and sugar. Fold in zucchini (I used 3 cups of shredded zucchini, although the recipe only calls for 2). Beat in the flour, salt, baking powder, baking soda, and cinnamon. Gently fold in the blueberries. Pour into the mini-loaf pans. (I opted for 3 big mini-loaves, but it could have easily made 4 good-sized mini-loaves.)
Bake 50 minutes, or until toothpick comes out clean when inserted in center.
Let cool about 20 minutes on wire rack. Slice & Enjoy!!!
