My #WeekBackup

My Food of the Week will definitely have to be the Red Velvet White Chip Cookies that I made for the first time.  If you like red velvet cake, I'm sure you'll love the cookies too.  Click the image to get the recipe!

I'm loving this song right now, and it's been playing in the car every time we get in to go somewhere!  Then it gets stuck in my head.

My younger daughter dropped my older daughter's Nintendo DSi into the toilet...Not pretty!  It was soaked, and by the time we found a tiny screwdriver to unscrew the battery, damage had already been done.
I'll try to get a photo before I post this, but I'm sure you can imagine the screens completely soaked with water.  =(

Red Velvet White Chocolate Chip Cookies

I'm making this a Foodie Friday here at 2justByou today!

I was looking for a new cookie recipe to try, because the end of the [year-round] school year is here, and I really didn't want to take the same old chocolate chip cookies, even though they're an all time favorite.  




I did some searching, and I found some seriously yummy-looking Red Velvet Chocolate Chip Cookies.  I decided to try it out, but I ended up adapting it.  I made two batches, one for school and one for us at home!


Adapted from how sweet it is.

Ingredients:
1 cup butter, softened
1 cup sugar
1 cup brown sugar
2 eggs
2 tsp vanilla
2 1/2 cups all purpose flour
2 tsp baking soda
1/2 tsp salt
2/3 cup cocoa powder
2 tsp red food coloring
1 1/2 cups white chocolate chips


Directions:
* Preheat oven to 350 degrees fahrenheit (oven temperatures may vary)
* Cream butter & sugars until fluffy.  Add eggs, one at a time until mixed & smooth.  Add vanilla until mixed in evenly.  Beat in the red food coloring.  Stir in cocoa, flour, baking soda & salt until just combined.  Then fold in the white chocolate chips.
* Drop by teaspoonful on baking sheet and bake 9-11 minutes. (For softer, chewy cookies, bake 9 minutes and leave on baking sheet for 2 minutes before transferring to wire rack to cool completely.)
* Makes about 4 dozen.  Enjoy!



For variation, you can leave out the red food coloring and make these Chocolate White Chip Cookies!
What really happened is I had run out of red food coloring (since I made two batches - LOL), so the batch for us turned out to be this kind.  Tastes just as good!

It's THAT Hard Finding "G" Rated Movies


Monday was Movie Day for my son's class at school.  Since it's the last week, they've got a week full of fun activities and end-of-the-school-year celebrations.  Students were instructed at the end of last week to bring in a G-Rated movie on Monday.  Kids would then vote on which movies would be viewed.

Well, lots of kids brought in movies, but...lots of them were rated PG.  Yes, everyone, it is that hard finding G rated movies, apparently.  When you think about it, it's really sad.  Lots of movies for kids and families have a PG rating because of just one swear word or even the smallest act of violence.  Why is it so hard to make some good, clean movies for our kids that are suitable for viewing while at school?  It shouldn't be that hard!  We don't need bad words or violence to have fun, and our kids need to know that.

I'm not saying that I don't like movies that are not G rated (huge fan of the Fast & Furious franchise, here!); I'm just saying that G rated movies seem to be in short supply, and there should be more.

Most of the G rated movies are animated.  Hats of to Disney, because most of the Top 100 G rated movies are from Disney.  Our family has always been a big Disney fan.  Happy endings and fireworks - what's not to like?  

 



















Anyway, the kids ended up watching Meet the Robinsons and Homeward Bound (both Walt Disney titles).

Last week I visited a few blogs that had a post full of randomness, and I loved it.  I love reading random posts from my bloggy friends, but, for some reason, I've never posted one!  So today, I thought - Why not?  Here we go...

More of Mom's Flowers

It's been a pretty long week, and I'm glad it's Friday.  How about you?

Let's end the week with some pretty flowers!!!  These are more pretty flowers from my mom's backyard garden.  She's great with plants (unlike me).  Hope you enjoy!
