Super Yummy Lemon Bars {Recipe - w/gluten-free option!}

A few weeks ago I shared one of my favorite desserts via Instagram. I realized that it's been a really long while since I shared a recipe here on the blog. I mean, REALLY long time - since mid-summer! So now that holiday season is here and baking is one of my favorite things to do in fall and winter, I decided it's definitely time to share.

Who likes lemon? I do!!! I love lemon-flavored goodies. You name it with lemon, I probably like it. I've always loved the sour flavor, even since I was little. My mom has the best lemon bar recipe ever. Plus, you can make it gluten-free - just substitute gluten-free flour! Easy peasy. And these taste SUPER YUMMY!

We have a neighbor with a lemon tree, and lots of lemons. We love to make fresh, homemade lemonade. But lemon bars are exceptionally tasty with fresh-squeezed lemon juice.


For the cookie base:
1 cup unsalted butter, melted
1/2 cup powdered sugar
2 cups all-purpose flour (or substitute w/gluten free all-purpose flour)

For the lemon filling:
2 cups sugar
4 tablespoons all-purpose flour (or substitute w/gluten free all-purpose flour)
1/2 teaspoon baking powder
4 eggs
6 tablespoons lemon juice (awesome with fresh-squeezed!)
lemon zest (optional)


Preheat oven to 350 degrees F.
Mix butter, powdered sugar & flour until well blended. Press mixture into bottom of 9x13 glass baking dish and bake for 20 minutes.
Sift together the sugar, flour and baking powder in large mixing bowl. Add eggs and lemon juice. Beat until well blended. Pour mixture over the cookie crust. You can add your optional lemon zest by sprinkling on top. Bake for 25 minutes.
Allow bars to cool, then dust with powdered sugar and a little bit more lemon zest. Cut into squares and enjoy!

These look and sound delicious! Lemon is not my favorite fruit flavor. However I love it in the form of cookies or bars. The sugar with the lemon is a combo I love!

I, too, love anything lemon! I come by it naturally, I guess--my mom is one of those people who can eat lemons like they're sweet oranges.

Anyway, these look yummy! And I agree everything lemon is better with fresh lemon juice. :)
