Baking Weather

I don't know about you, but when it's cold outside, I feel like baking! We had some pretty bad weather over the last week. High winds took down fences and trees all around the area - my fence was one of them! There were power outages, roads were blocked...It was crazy.

This is my front yard fence after the windy winter storm!
If you follow me on Instagram, you probably already saw this pic.

But like I said, it gets cold and the weather outside is icky...And I get to feeling like baking. Most of the time I don't even care what I bake. I'll show you what I made over the last few days.  =0)

I made my first ever Cheesecake Pie!
And it's egg-less at that.
I might just share the recipe real soon.

I also made one of my personal all-time favorites - Lemon Bars.
Get my recipe (with a gluten free option) here.

In celebration of National Blonde Brownie Day (which was on Sunday), I tried making some for the occasion. I used white chocolate chips and pastel sprinkles. I'm pretty happy with the way they turned out.

And then on Sunday, the sun popped out just a little bit before another small round of rain.

The forecast for the upcoming week is supposed to be just cloudy skies, but no rain. We'll see...

How has the weather been in your area? Do you like to bake in the winter time? Tell me in a comment below!

The weather is baking here - so I am not. Close to 100 today with high humidity. Bleah.
Your baking looks good though - and I feel for your pain after the windstorm.

We've had some bad weather here too--some snow and ice, which we don't get a lot of in the PNW. I like to bake, but I don't like the calories and try to stay away from excessive sugar, or I would definitely bake more.

Oh dearie my! Your poor fence. We had a lot of wind in coastal Delaware, but all that happened in my yard was some trash blowing in it.
